What is Birria?
Birria is a beloved Mexican stew originating from the state of Jalisco. Traditionally made with goat or beef, the meat is slow-braised in a rich, complex sauce made from a blend of dried chiles — including guajillo, ancho, and pasilla — along with cumin, oregano, cloves, and other aromatic spices.
The result is incredibly tender, deeply seasoned meat and a rich, aromatic broth called consomé. This broth is the soul of birria — used for dipping tacos, ladled into bowls, and even used to crisp the tortillas on the griddle.
In recent years, birria tacos (often called "quesabirria" when filled with melted cheese) have become a nationwide food phenomenon.
